“Kuromame” is one of the tons of dishes Japanese makes for New Year celebration. It is sweet and we eat small amount as a side dish. My mom use to make beautiful “Kuromame” with no wrinkle. I am unsure how she did, but all beans were beautifully shiny. I found this recipe by using a slow cooker, and it always gives me a good result.
300g of black soybeans, washed
1200ml of water
250g of sugar
2 tablespoons of soy sauce
1 teaspoon of salt
1 teaspoon of baking soda
1. In a slow cooker pot, put water, sugar, soy sauce, salt and baking soda, and boil it.
2. Turn off the heat, and add black soy beans. Leave it over night.
3. Cut parchment paper as the size of the inside of the pot, and place it right on the water and beans. Run the slow cooker for 6 hours or until you get the softness of the beans you like.
4. Leave it until it is cooled down.
5. Put the beans with syrup in a clean container or a glass jar, and leave it in a fridge. It is the best to start enjoying the beans from the following day.
