Sweet black beans is one of the foods many of Japanese people eat during the New Year holidays, as one of the ‘Osechi’. They believe black beans will bring you a healthy life. My mother used to make this black beans every year. This is to use a slow cooker.
<Ingredients>
200g of black beans
1000cc of water
160g of brown sugar
1/2 teaspoon of salt
1 tablespoon of soysauce
1 teaspoon of baking soda
<Instruction>
1. Gently wash black beans.
2. Boil the water, and add sugar, salt, soysauce and baking soda, and mix well. I boil water with a kettle and pour into a pot of my slow cooker and add the other stuff.
3. Add black beans into 1, and leave it for 6-8 hours. Make sure all black beans are under the water. If any beans floating, remove them. (Most likely the inside was eaten by an insect)
4. Start the slow cooker. Cook for 8-10 hours. When it is done, check to see if the beans are soft enough.
5. Cool down to the room temperature.
6. With a very low heat, cook for 15 mins again. Cool down to the room temperature. Then move all to a container and store in a fridge.
