Salmon Avocado Salad with Lemon Vinaigrette

Sometimes I feel like I want a salad with something ‘special’. The ‘special’ could be anything other than the vegetables you often put in a salad, such as green leaves, tomatoes, cucumber, or celery. Salmon and avocado are in our group of ‘special’, and we make this when we feel like we want to eat a lot of salad as a mail dish. If you can’t find salmon sashimi, smoked salmon will do a good job, and if you find fresh good tuna sashimi, it is a good choice too.

Ingredients

About 100-150g of salmon sashimi (or smoked salmon or tuna sashimi)
1 avocado
your choice of basic salad such as any kind of green leaves and tomatoes.
<For lemon vinaigrette>
1 tablespoon of fresh squeezed lemon
1 teaspoon of Dijon mustard
3 tablespoon of olive oil
Salt and pepper

Instruction
1. Cut salmon sashimi and avocado in about 1.5cm cubes.
2. Prepare the other vegetables in a salad bowl, and add 1 on the top.
3. Mix all the ingredients for lemon vinaigrette, and mix all well before you eat. (I put all the ingredients in a bottle and shake well.)
