Miso soup with potato and onion is my favorite!

Ingredients (for 2)
1 small or medium potato, cut in half or quarter then slice in 5mm
1/4 of onion, sliced in 2-3mm
2 cups of Dashi soup
2 tablespoons of miso
chopped green onion as garnish

Instruction
1. Soak sliced potato in water for about 5 mins, and drain the water.
2. Heat dashi soup and potato in a small pot at a medium heat. When it starts boiling, add onion slices and turn down the heat to low to medium and cook until potato slices are cooked.
3. Turn off the heat, and add 2 tablespoons of miso.
* to dissolve miso, put miso paste in a ladle and add some dashi soup from the pot. whisk them with a folk or a spoon in the ladle. When the miso becomes almost like liquid, mix it in the pot. You can do this in a small bowl too.
