Lettuce Wrap

This miso flavored lettuce wrap is a perfect match with fresh crunchy lettuce. Basically you fry ground meat or chopped meat and vegetables, and you can use any kind of meat and different vegetables.


Ingredients (for two)

half lettuce
150g of ground meat (pork, chicken or beef etc)
50g of boiled bamboo shoot
10cm of carrot
3 of dried Shiitake mushrooms
10g of ginger
green onion
<For sauce>
half cup of water – This is to soak Shiitake mushrooms first, then use for the sauce.
1 tablespoon of miso *any kind is fine
1 tablespoon of sugar
1 tablespoon of sake
1 tablespoon of mirin
sesame oil


Instruction

1. Clean lettuce first, and keep in a fridge.
2. Soak dried Shiitake mushrooms in a water and leave until mushrooms become soft. Then squeeze the mushrooms to get rid of water, and chop them in about 3mm cubes. Keep the water used for mushroom aside. This is used for the sauce later.
3. Chop ginger, carrot, bamboo shoot and green onion.
4. Prepare sauce. In a small bowl or cup, mix all the ingredients.
5. In a pan, add sesame oil, then cook ground meat first. When the meat is cooked well, add and cook ginger, dried mushroom and green onion with the meat.
** I recommend of cooking ground meat completely first without anything. I learned that this way will remove the smell of the meat.
6. Add the mixture of the sauce (4) to the pan. Cook until it is mixed and the water is evaporated.
