This soup is such a conform food especially when you are tired or cold. Also good thing is very easy to cook using some leftover of your vegetables in your fridge. You can add orzo pasta, or this is perfect with bread.
<Ingredients>
2 or 3 Italian sausages, with skin removed. Break with fingers into pieces. (1-2cms)
1/2 of onion, chopped
1 small carrot, chopped (or 1/2 of a large carrot)
3 stalks of celery, chopped
1 piece of garlic, chopped
1 canned tomato
Salt and pepper
1 teaspoon of dried Italian herbs
2 cups of chicken broth
Olive oil
<Instruction>
1. Heat a pot and add a tablespoon of vegetable oil. Cook the sausages until they get brown and cooked. Put the sausage aside, keep the oil in the pot.
2. Add onion, carrot, and celery, and cook until they are soft. Add garlic and cook another about 1 minute.
3. Return the sausages, and add a canned tomato, chicken broth, Italian herbs. With the medium to high heat, bring it until it is boiled.
4. Cover the pot, turn down the heat and cook another 15-20 mins. Taste and add salt and pepper as you want.
