My Italian husband says each region has different type of pasta and sauce. As a roman, he is proud of the pastas from there, carbonara, Cacio e Pepe, amatriciana and gricia while he loves any kinds of pasta. I saw my brother in law was having cacio e pepe almost every other day while we spent some time with him and his wife. It is indeed beautiful to see how much the people love their own local cuisines.
