How to Cook Brown Sushi Rice without Soaking (in a pot and an electric pressure cooker)

Brown rice is unpolished whole grain rice with bran and germ, a good source of magnesium, phosphorus, selenium, thiamine, niacin, vitamin B6, and manganese, and is high in fiber. It is harder than white rice, so it needs to be cooked differently from white rice. A lot of recipes of brown rice need to soak brown rice for hours, this means, you already need to decide if you eat brown rice hours before. However, we can’t decide what we eat for dinner a night before, or first thing in the morning. I found two good ways of cooking brown rice without soaking for hours, in a pot and in an electric pressure cooker. Keep in mind it takes 1 hour to cook, but this should be easy and quick enough!

<Method1: In a pot>
This way is originally from Akita prefecture, and called “Bikkuri Daki” in Japanese, meaning giving a shock to rice.

Ingredients
3 “Go” (450g) of Rice
600ml of water *The ratio between rice and water should be 1 rice : 1.2-1.5 water.
450ml of cold water *Same amount as the rice. If you like soft rice, add 540ml of water (1.2times more)

Instruction
1. Wash brown rice lightly. Keep 450ml of water in a fridge. It is important to keep the water cold as this cold water is to give a shock to rice later with different temperatures.
2. Put rice in a pot, and add water.
3. Cover the pot and cook for 17-20 mins at high heat. If it is boiling too much, turn down the heat. It is okay to open a cover quickly to check inside. If it is crackling too soon during this step, add 90ml of water.
4. When you hear the noise of crackling, add 450ml of cold water and mix gently with a spoon.
5. Cover the pot,and cook until it is boiled inside.
6. When it is boiled, turn the heat down to low, and cook for 15-20 mins.
7. When you hear crackling, check inside. You should be able to see small holes on the surface. If there is no water coming out from those holes, it is cooked already. Cover and leave for 10 mins to steam.
8. Mix gently with a rice spatula or spoon to give a nice fluffy texture right before serving.

<Method2: Using an electric pressure cooker>
I bet this way is the easiest!

Ingredients
3 “Go” (450g) of Rice
750ml of water

Instruction
1. Wash brown rice lightly.
2. Put rice in a pot, and add water. If you have time, leave it for 15-30mins. (You can skip this if you don’t have time.)
3. Set the electric pressure cooker at high for 20 mins, natural release.
4. Mix gently with a rice spatula or spoon to give a nice fluffy texture right before serving.
