Gluten Free Dumpling Skin

This is actually my recipe of gluten free dumpling skin. My husband was interested in ‘Almost’ gluten free diet and we love dumplings, so I did several try and errors, and so far I think this gives a good result and easy to handle. Here is the one in English.

Ingredients
50g of rice flour
50g of tapioca flour
70cc of hot water
Corn starch or potato starch (to place dumplings on a plate)

Instruction
1. Mix rice flour and tapioca flour in a bowl.
2. Pour 70cc of hot water into 1, and mix with chopsticks or a folk.
3. When the dough become less hot so that you can touch, start kneading until the dough becomes smooth.
4. If it feels too dry, add very small amount of hot water. The dough should not be sticky thus you don’t need corn starch or flour.
5. Roll the dough with about 3cm in diameter, then cover it with a plastic wrap quickly.
6. Cut a small piece from the dough, roll it, and put your favorite filling while covering the remaining dough with a plastic wrap. if the dough is dry, add very small amount of water (1-2 drops per small piece as a start) and knead the dough.
