Fried rice is one of the typical quick lunch dishes at home in Japan as they always have some leftover rice. Lettuce fried rice is my favorite as it is very fun to enjoy fresh crunchy lettuce.
Ingredients (for 1 person)
150-200g of cooked rice
1 sausage (or a couple of slices of ham), slice in 5mm-1cm
1 egg
2-3 leaves of lettuce, wash and tear into 3-4cm.
1/2 tablespoon of chicken soup powder
1/2 tablespoon of mayonnaise
1 teaspoon of soy sauce
salt and pepper
1 tablespoon of vegetable oil
Instruction
1. Heat a fry pan and oil. Then saute sausage with a medium to high heat.
2. Add rice and cook to coat the rice coated by oil.
3. Add chicken powder and mayonnaise, and mix and cook lightly.
4. Add egg. You can break the shell and directly put on the top of rice in a fry pan. Keep the heat, and with a spatula, break and mix the egg quickly. This egg will be coating rice and the rice becomes fluffy.
5. Add soy sauce and mix. Then finally add lettuce. Mix and cook for a min, but do not over cook to keep the crunchiness of lettuce. Add salt and pepper as needed.
