Eggplants taste so good with curry flavor!
Ingredients
1 large eggplant *Or 3 Japanese eggplants
200-300g of ground meat (chicken, pork, beef etc)
1 onion
1 green large pepper *Or 2 green small-medium peppers
1/2 carrot
Optional vegetables (depending on what you you like, you can skip these)- 1 medium size of zucchini, okura, celery
2 tablespoons of flour
1-2 tablespoons of curry powder * depending on the spice level you like
1.5 cup of water
2 bay leaves
1 tablespoon of soy sauce
1 tablespoon of ketchup *optional.You can also use 2 teaspoons of tomato paste.
Salt and pepper
Instruction
1. Cut an eggplant into 2-3 cm cubes, place in a bowl, sprinkle salt and pour 1 cup of water . Leave it for 10 mins.
2. Chop all vegetables in 1cm.
3. In a large fry pan, add some vegetable oil, and saute onion and carrot.
4. Add ground meat and continue to saute until it is cooked.
5. Add flour and curry powder to 4 and keep cooking. If it needs oil, add 1 tablespoon of vegetable oil or butter.
6. Get rid of the water from eggplant. Squeeze the eggplant to remove the water from inside. Mix it into the curry and vegetable mixture. Cook for 5 mins, then add water, bay leaves and ketchup.
7. When the curry is becoming thicker, turn down the heat and add 1 tablespoon of soy sauce and salt and pepper.
8. Serve with rice.
