Braised pork belly needs time, but the pork becomes so gentle and melting in your mouth! The key is to remove the fat as much as possible, and correctly cook pork to remove any unnecessary smell and make it very tender. To remove fat, frying in oil is the fastest way, alternatively, you can boil pork from cold water for 30mins, 3 times. To remove any unwanted smell, boil with green onion and wash the pork. To get tenderness, do not over cook with a pressure cooker, or cook slowly in a pot. You can also use a slow cooker for 6 hours for this step.
Braised pork belly can be a main dish for your lunch or dinner, also it taste well if you put on top of rice in a bowl and pouring sauce on top, or on ramen like a Japanese ramen shop!
Ingredients
1kg of pork belly, cut in about 5-6cm
1 Japanese leak, or 5 spring onions, cut in half
oil
water
<For sauce>
1000cc of water
5 tablespoons of sake
5 tablespoons of sugar
5 tablespoons of soy sauce
1 piece of ginger, slices
Boiled eggs
Instruction
<Method1- Using a normal pot>
1. In a large fry pan, add 2 tablespoons of vegetable oil cook pork belly with the fat side down at the high heat. Make sure all the surfaces are cooked. You will see a lot of oil coming out.
2. In a large pot, add the pork belly, water, leak (or spring onions), and cook at the high heat until it is boiled. Turn down the heat to low, and cook for 1 hour.
3. Meanwhile, prepare soft boiled egg.
4. Take out the pork from the pot, and wash each piece gently with running water. Wipe all with a kitchen paper.
5. In a separated bowl, place pork belly, and add water, sake, and sugar, and cook at the high heat until it is boiled. Turn down the heat to low, and add ginger and soy sauce. Cook for 1 hour.
6. Turn off the heat and add eggs, and leave for 30 mins.
<Method2- Using electric pressure cooker>
1. In a large fry pan, add 2 tablespoons of vegetable oil cook pork belly with the fat side down at the high heat. Make sure all the surfaces are cooked. You will see a lot of oil coming out.
2. In an pressure cooker, add the pork belly, water, leak (or spring onions), and run the cooker at high for 15 mins.
3. Meanwhile, prepare soft boiled egg.
4. Take out the pork from the pot, and wash each piece gently with running water. Wipe all with a kitchen paper. Wash the pressure cooker pot quickly after getting rid of water and green onion inside.
5. Place back pork belly, and add water, sake,sugar, soy sauce and ginger, run the cooker at the high pressure for 12 mins.
6. Add eggs and leave for 30 mins.
