These apple cardamon muffins are with the same base as my blueberry yogurt muffins. The gorgeous fragrance of cardamon is a great combo with soft tender apple. You don’t need to cook apple beforehand, and just need to slice or cut in cubes and toss into the muffin mixture, super easy! I sometimes add a few shakes of turmeric powder too so that the muffins look beautiful yellow.
Ingredients for 12
2.5 cups of plain flour
1 tablespoon of baking powder
1/2 teaspoon of baking soda
1/2 cup of sugar
2 eggs
1/3 cup of vegetable oil or olive oil
1 cup of plain yogurt
1/4 cup of milk *may need more
1 apple, sliced or cut in cubes
1 teaspoon of cardamon *I love cardamon flavor, but you may want to start from 1/2 teaspoon if you are unsure.
Instruction
1. Preheat oven at 180C.
2. Mix all dry ingredients (flour, baking powder, baking soda, sugar and cardamon) in a large bowl with a whisker.
3. Mix all wet ingredients (eggs, oil, yogurt and milk) in a different medium size bowl with a whisker.
4. Fold 3 in 2 lightly with a spatula. Do not over mix. Then add apple slices. The batter should be like a pancake batter but should not be smooth. If the batter is too dry, add some milk.
5. Spoon into the muffin pans, filling each cup almost to the top to get a mushroom look.
6. Bake for about 15-20 mins.
