Simmered Japanese Pumpkin

Simmered pumpkin taste good both in being warm and cold, and quite fullfilling. It goes well with a light main, and also keep in a fridge for a few days.

Ingredients

About 500g of pumpkin, remove guts and hard brown parts of the skin, and cut in 3-4cm cubes
2 cups of water
4 tablespoons of sugar
2 tablespoons of soy sauce
1 tablespoon of sake

Instruction
1. Place pumpkin cubes in a pot, and add 2 cups of water and sugar.
2. Turn on the heat, and cook until it is boiled. Then add sake. Cook for 10 mins.
3. After 10 mins, add soy sauce, and cook until pumpkins are soft enough.
