Pan Fried Burdock “Kinpira Gobo”

“Kinpira Gobo” is also very popular side dish in Japan. My mom’s “Kinpira Gobo” is very simple, just with burdock and carrot.

Ingredients
1 burdock
1/2 of carrot
1 tablespoon of sesame oil
1 tablespoon of soy sauce
1 tablespoon of brown sugar
1 tablespoon of white sesame

Instruction
1. Roast sesame in a fry pan.
2. Cut burdock into 5cm lengths, then slice into 3mm. Soak the sliced burdock in water for 5-10 mins.
3. Cut carrot in the same way as burdock.
4. In a fry pan, add and warm sesame oil. Add burdock after getting rid of water, and carrot. Cook with a medium heat about for 5 mins.
5. Add sugar to 4, and brown sugar then soy sauce, and cook until almost all the liquid is absorbed. Turn off the heat.
6. Add half of roasted sesame and mix, then sprinkle the other half of sesame on top when serving.
