I love fluffy scrambled eggs, and tried a few things, adding cream, milk, water, extra butter, different heats, and different kind of fry pans. It all came out differently, picking up the benefit from each, and I enjoyed all. I never knew about this trick until i found this post below, suggesting of baking powder, and this works well too!
“Mixing a small amount of baking powder (just one-eighth of a teaspoon per two large eggs) into beaten eggs before cooking will work the same magic that it does on pancakes, and will result in eggs that are light and fluffy.”
The original article with their links are also very interesting, showing what all professional chefs are doing.
