This is perfect dish for summer if you have tomatoes and old bread. Since we started doing this panzanella, I became happy to see old bread in our kitchen so that we can do pazanella. This doesn’t require much ingredients as long as you have tomatoes and bread. We do slightly differently from the original recipe. We toast bread and do not soak the bread in water and vinegar while the original recipe soaks the bread in water and does not toast it. Also we reduced the amount from the original recipe while keeping the same amount for tomatoes and basil.
Ingredients (with our tweak)
3 slices of bread, toasted
2 large tomatoes
1 cucumber diced
1 bunch of basil
1/4 red onion, sliced
1/4 cup of sliced black olives
1/4 cup of feta cheese *optional
6-7 tablespoons of olive oil
3-4 tablespoons of vinegar
1 teaspoon of mustard
Salt and pepper
Instruction
1. Cut the toasted bread into 2-3 cm cubes. I usually wait until the beard looks brown.
2. Wash the tomatoes and cucumber and cut them into cubes. Slice red onion thinly, wash in the water and squeeze it. Chop the basil leaves with your hands.
3. Mix the bread, chopped tomatoes and cucumber, sliced onion, basil, black olives and feta (if you use) into a salad bowl.
4. In a small bowl or a dressing bottle, mix salt and pepper, olive oil and vinegar. Then pour the dressing to the bread and vegetable in the salad bowl. Mix well. Cover it and rest it for a couple of hours.
