My mom always says sweet potato has a lot of nutrition. You see sometimes a truck with stone oven where sweet potatos are baked on a street in Japan, and we used to buy it. It is sad there are much less Sweet potato trucks nowadays in Tokyo.
Ingredients (using an electric pressure cooker)
2 Go (360ml) of rice
360ml of water
200g of sweet potato
1+1/2 teaspoon of natural salt
Instruction
1. Wash rice as normal white rice, and add in a bowl of pressure cooker, and add water and salt.
2. Cut sweet potato in 1.5cm cubes, ideally keep the skin washing the skin well with a brush.
4. Add sweet potato in rice.
5. Turn on the pressure cooker, and cook for 7 mins, with medium or high pressure and natural release.
6. Mix lightly and serve it. Sprinkle a little of sesami salt (Goma Shio) if you have.
I developed this recipe based on this website although this uses a normal rice cooker. They do have many great recipes of Japanese foods.
