This strawberry tart is perfect to cerebrate spring. It is good looking and delicious!

Ingredients
All ingredients for almond tart
400-500g of strawberries
For custard, (I used the Japanese recipe linked at the bottom of this page, doubling the amount)
2 eggs
2 tablespoons of plain flour
6 tablespoons of sugar
400g of milk
vanilla essence or vanilla beans
For syrup,
1 tablespoon of apricot jam
1.5 tablespoon of hot water
Instruction

2. Make a custard cream. Add and whisk eggs in a pot, then add flour and sugar and mix well.
3. Add milk and vanilla essence to 2, and mix with a whisker.
4. Turn on the stove with a high heat, and keep whisking the mixture until it starts thicker. Turn down the heat to medium. When it becomes creamy, turn off the heat.
5. Spread the custard cream on a flat metal pan or a plate to cool it down.
6. Prepare syrup. In a small bowl, mix apricot jam and hot water and cool it down.
7. When both an almond tart and custard cream are not warm anymore, spread the custard cream on an almond tart.
8. Cut strawberries into any shape you like, cut in half or slice in 2-3mms etc. If you have many small strawberries, you can use those as they are. Decorate 9 with strawberries.
9. Brush apricot jam syrup on strawberries to make them look shiny.
