Cotechino and lentil stew is a must for New Year’s eve meal for Italian, and my husband is not an exception. Accordingly lentil means money from its shape.
This is using black lentil, and depending on what colour of lentil you use, the cooking time is different.
If you would like to have less liquid lentil stew, you can reduce the soup to 2 cups. (The ratio is 1 lentil : 2 liquid)
<Ingredients>
1/2 onion, chopped in dices
1 carrot, chopped in dices
1 large stalk of celery, chopped in dices
1-2 clove of garlic, chopped
1/2 teaspoon of cumin
1/2 teaspoon of paprika powder
1 teaspoon of Italian herbs
2-3 bay leaves
1 cup of black lentil
4 cups of chicken soup or vegetable soup
1 tablespoon of olive oil
Salt and pepper
<Instruction>
1. Heat a pot and warm the olive oil.
2. Saute onion, carrot and celery until all are cooked and soft. Add garlic and all the spices, such as cumin, paprika powder, Italian herb, and salt and pepper,and cook for another 1 min.
3. Add lentil and chicken soup.
4. Set the pressure cooker with 7 mins. Once it is done, release the pressure quickly.
5. Taste it and add salt and pepper as you need.
