It’s been years I have tried cheese scones and this is the best one so far. I like cheesy scones soft and moist inside. You can add bacon bits, chopped spring onion or chives, or chili pepper as you like.
Ingredients (for 6 medium size)
220g of plain flour
3 teaspoons of baking powder
1/4 teaspoon of baking soda
1/4 teaspoon of salt
25g of cold butter, cut in small cubes
125g of grated cheese plus extra for topping
150g of yogurt * you may need a little more.
Instruction
1. Preheat oven at 190C.
2. Sift flour, baking powder, baking soda and salt in a large bowl.
3. Add butter, and rub into the flour mixture with your fingers.
4. Stir cheese.
5. Add yogurt to 4 to have all ingredients into a dough. Start from 120g and mix with hand, and gradually add yogurt.
6. Cover the dough with a wrap and rest in a fridge for 30 mins.
7. Roll the dough with 3-4cm in thickness, and cut into the shape and size you like. Place them onto the parchment paper on the even tray. Add extra cheese on each scone.
8. Bake for 12-15 mins.
