Muffins have been our go-to weekend breakfast for a while. I tried many different recipes before coming up with this. You can put blueberries as much as you like! I also recommend ading cubes of an apple and some cinnamon or cardamon powder instead of blueberries.
Ingredients for 12
2.5 cups of plain flour
1 tablespoon of baking powder
1/2 teaspoon of baking soda
1/2 cup of sugar
2 eggs
1/3 cup of vegetable oil or olive oil
1 cup of plain yogurt
1/4 cup of milk *may need more
1.5 cup of blueberries (can be frozen)
Instruction
1. Preheat oven at 180C.
2. Mix all dry ingredients (flour, baking powder, baking soda and sugar) in a large bowl with a whisker.
3. Mix all wet ingredients (eggs, oil, yogurt and milk) in a different medium size bowl with a whisker.
4. Mix 3 in 2 lightly with a spatula or a folk. Do not over mix. Then add blueberries. The batter should be like a pancake batter but should not be smooth. If the batter is too dry, add some milk.
5. Spoon into the muffin pans, filling each cup almost to the top to get a mushroom look.
6. Bake for about 15-20 mins.
