The combination of beef and onion makes the best Udon soup!
Ingredients (for two)
150g of thin sliced beef
For sauce of beef
1/4 of onion, sliced
1 tablespoon of sugar
1 tablespoon of mirin
1 tablespoon of sake
1 tablespoon of soy sauce
For Udon soup,
600ml of Dashi
1 tablespoon of soy sauce
0.5 tablespoon of mirin
1 teaspoon of sugar
1 pinch of salt
Udon noodle for two *Could be dried, frozen or fresh
For topping (optional)
green onion, sliced Kamaboko (fishcake), poached egg, ginger etc
Instruction
1. In a small pot, saute onion first. When onion started to become cooked, add sliced beef.
2. When the beef is almost cooked, add all the ingredients (1 tablespoon of sugar, mirin, sake and soy sauce) of the sauce for beef. Cook for a few mins. leave this aside.
3. Prepare Udon soup in a pot. Put all the ingredients of Udon soup, and cook until it is boiled.
4. Cook Udon as instructed on the package.
5. Place Udon and Udon soup in each bowl, add the beef and onion on top, and garnish with green onion and anything else you like to add as topping.
