Fudgey Melting Brownie

This recipe is just brilliant! The brownie came out very fudgey, not like a cake at all! Yes if you make it in 9×9″ pan, it is thin, and that’s what I wondered when I pour the mixture in a pan. However, I think it is good to be thin considering the texture. For a smaller size, I simply use the half of the ingredients and use 8X8 pan.

Sometimes I add dried cranberries or chopped dried apricots, or candied cherries or oranges.

1 cup white sugar
1/2 cup vegetable oil
1 teaspoon vanilla extract
2 eggs
1/2 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped walnuts (Optional)
1/2 cup of dried cranberries or chopped dried apricots or candied cherries or oranges (Optional)


1. Heat the oven at 175C. Prepare a baking pan. Grease it with oil or place a parchment paper.
2. Mix wet ingredients; Add sugar, oil, and vanilla together in a medium bowl; beat in eggs until well combined.
3. Mix dry ingredients in a separated bowl; flour, cocoa, baking powder, and salt together
4. Gradually stir into egg mixture until well blended. Stir in walnuts, and other dried fruits if you want to use.
5. Spread the batter evenly into the prepared pan.
6. Bake in the oven for 20-25 mins, or until the brownie begins to pull away from the edges of the pan.
