This sweet potato with lemon sauce is normally a side dish in my family, but it can be a good snack as it is fulfilling and healthy.
Ingredients
200g of sweet potato
4 tablespoons of sugar
2 tablespoon of lemon juice
1 pinch of salt
400ml of water
Instruction
1. Wash sweet potato and slice in 1cm. You can keep the skin. Soak the slices in water for a few mins and get rid of water.
2. Place sweet potato slices in a pot, and add sugar, lemon juice, salt and water. Cook at the medium to high heat until it is boiled, then turn down to low heat and cook until the sweet potato is soft enough.
3. Move the sweet potato in a container and cover them directly with plastic wrap first so that they don’t get dried. Leave them for a while. When it is not enough, cover the container and keep in a fridge.
