“Ohitashi” refers to a dish of a vegetable marinated in dashi soup, and that’s what you find in a restaurant in Japan. However, there is the other kind, much simpler, just with sprinkled bonito and a few drops of soy sauce. This is what we eat at home. This is the typical side dish at home. I like the simple version as not only it is very easy but also you can fully enjoy great taste and flavor of spinach.
Ingredients
A bunch of spinach
A pinch of salt
Bonito flakes
Soy sauce
Instruction
1. Cut roots of each spinach, but keep the pink bottom part that combines all small branches so that still all the leaves are not separated. Wash well between the leaves and branches.
2. Prepare boiled water and add a pinch of salt.
3. Grab a leaf part of a bunch of all spinach with a hand, and put the half lower part from the pink bottom into the boiled water for 30 secs.
4. Put the entire spinach into the boiled water and cook for another 30 secs.
5. Take the spinach out from the pot, and leave in a strainer until it becomes less hot. Do not use cold water to cool down.
6. When it is not too hot, Take all spinach branches from the strainer and place on a chopping board in the same direction. (I place all the bottoms on the left side for example.) Grab and squeeze all the spinach to remove the water.
7. Cut off the pink bottom part, then cut in 3-4cm, and place into a small individual plate.
8. Sprinkle bonito flakes on top, and serve with soy sauce.
